You will need 3 small or 2 large cucumbers, half a tomato, quarter onion, 1 teaspoon black pepper, half a teaspoon salt, ¾ cup boondi (fried chickpea flour), cilantro to your liking, 5 tablespoons yogurt and ¾ cup water if you would like.
First, cut up all your vegetables and cilantro into small or medium pieces and place into a large bowl.
Next, you will add 5 tablespoons of yogurt, black pepper, salt, and boondi.
If you would like your raita to be running you can add ¾ cup of water, otherwise, you can leave it thick.
Mix well, and enjoy!
You can eat it as is or people in South Asian countries usually eat it with chicken pilaf or other types of rice.
You can leave the raita in the fridge for about 2-3 days.
