Delicious Moist, Dense, West Indian Fruit Cake. Try it and let me know how it came out.
**Ingredients for cake **
2 cups or 1 lb butter
2 cups or 1 lb Brown sugar
10 large eggs
2 tsp grated lime and 2 tsp lemon peel
2 tsp vanilla extract or 1 tbsp vanilla essence
1 tsp almond extract
1 1b or 2 cups flour (baking or all purpose) (sifted)
4 tsp baking powder
1 tsp salt
1-2 tsp mix spice
2 tsp ground cinnamon
2 tsp nutmeg
1/4 cup browning or more for darker color
4-5 cups of soaked blended fruits
Preheat the oven to 275 degrees Fahrenheit and place a hot water bath at the bottom rack. Just after preheated placing the cake in the oven and bake it for 1 and 1/2 to 2 hours. To check if it’s done, insert a toothpick into the center of the cake; it should come out clean.
After baking, add 1/2 cup of a combination of wine and rum or brandy (your choice). Let it soak for 10 minutes, then add another 1/4 cup. Allow it to cool completely for 5 hours before cutting. You can also let it rest overnight and saturate it with wine as needed.
