In today’s video, I’m taking you to Cologne, Germany, where I discovered a ramen restaurant that truly captures the authentic taste of Japan.
This time, I’m introducing you to TAKEZO - a hidden gem that serves up some of the most delicious ramen I’ve had outside of Japan.
The flavors were absolutely incredible, and I’ll be doing a full, in-depth food review so you can see exactly what makes this place so special.

And wouldn't you know it, there were Japanese people working at Takezo! So I ordered my ramen in Japanese.
Thankfully, the staff was super kind and took the time to explain the menu in detail.
He explained the recommended menu items very politely. It really made me think again—Japanese service is the best! The friendly staff member was truly kind and attentive.

Incidentally, in Japan, thick noodles with a firm texture are often used for miso ramen to stand up to the rich, deep flavor of the soup. Since soy sauce ramen is relatively light, medium-thick noodles are common to balance the soup. Additionally, for salt ramen and tonkotsu ramen, thin noodles that don't overpower the delicate saltiness tend to be preferred.
Skillfully balancing the firmness and thickness of the noodles with the soup is where a shop's dedication and skill truly shine.

Tantan-men noodles that are popular with Europeans. Tantanmen / dàn dàn miàn originated in China, but in Japan they've fused with ramen culture to evolve into a unique style. They've been adapted to suit Japanese tastes—featuring broth, sesame flavor, and mild spiciness.

Zum Glück war das Personal super nett und nahm sich die Zeit, mir die Speisekarte ausführlich zu erklären.
Er erklärte mir sehr höflich die empfohlenen Gerichte. Das hat mich wirklich wieder zum Nachdenken gebracht – japanischer Service ist einfach der beste! Der freundliche Mitarbeiter war wirklich sehr nett und aufmerksam.
