One of the most ancient Argentine recipes that hides a secret to perfectly tender meat.
This recipe for making tough cuts of meat tender is an Argentine special, handed down from generations. Cooking meat with Milk is something I have wanted to record and share with you all for a long time.
So here goes.
What you will need:
1-2 litres of milk (I prefer skimmed)
2-3 kilos of flank (beef)
5 grams of coriander
10 grams of salt
5 grams of sweet chilli (or paprika)
5 grams of black pepper (ground)
5 grams of pepper corns (whole)
Steps
Step 1 - Preheat the oven to 180/190 degrees Celsius
Step 2 - To properly tenderize meat, you need to rest your meat outside of the fridge before putting it in the oven. Let it rest for 2-3 hours prior.
Step 3 - Massage the meat with olive oil and apply the spices on both sides.
Step 4 - add your milk and make sure all the meat is all covered with milk ideally all covered.
Step 5 - cover the meat and let it cook slowly for 2 hours and 20 minutes.
Serve up and enjoy!
