The Marinade: Typically a mixture of soy sauce, calamansi juice, brown sugar, garlic, and banana ketchup, often marinated overnight to ensure tenderness and deep flavor.

You can also buy pork internal organs here, such as grilled pork intestines, pork liver, and more. They also sell grilled squid and quarter size grilled chicken.

The Mercato Centrale in Bridgetown Pasig is open every Tuesday to Sunday, from 02:00PM to 12:00AM.
