Recipe Step by Step: Caesar Salad with Shrimp & Signature Dressing

Ingredient:
For the dressing:
1 sprig fresh thyme or rosemary
1 garlic clove
1/3 lemon (juice)
1 tsp Dijon mustard
1 tsp miso paste (or 1-2 anchovies as a substitute)
4 tbsp mayonnaise
2 tsp Worcestershire sauce
30g grated hard cheese (such as Parmesan)
For the salad:
2 heads romaine lettuce or 1 head iceberg lettuce, torn into bite-sized pieces
10 cherry tomatoes, halved
12-15 peeled shrimp
1 tsp garlic powder
A few generous handfuls of croutons
Additional grated cheese for topping
Salt and pepper, to taste
Instructions:
1. Prepare the Dressing:
In a mortar and pestle or blender, crush the rosemary sprig, garlic clove, and lemon juice until smooth.
Add Dijon mustard and miso paste (or anchovies, if using), and mix well.
Stir in mayonnaise and Worcestershire sauce until fully combined.
Finally, add 30g of grated cheese and mix until you get a smooth, creamy dressing.
2. Assemble the Salad:
In a large mixing bowl, combine the torn lettuce pieces with about 2/3 of the dressing, ensuring the leaves are evenly coated.
Transfer the coated lettuce to your serving bowl or platter as the base layer.
3. Add Toppings:
Place the cherry tomato halves evenly across the salad.
Lightly sauté the peeled shrimp in a pan with a touch of oil until just cooked, then sprinkle with 1 tsp of garlic powder. Once done, arrange the shrimp on top of the salad.
Drizzle the remaining dressing over the salad without mixing.
Scatter a generous handful of croutons and a handful of extra grated cheese on top for a finishing touch.
4. Season and Serve:
Add salt and pepper to taste.
