🎄 🍰 Ingredients:

Plain Flour 100g (⅔ cup)
Baking powder 1 teaspoon
4 Eggs (medium size)
Sugar 100g (½ cup)
Melted Butter - salted 55g (¼ cup)
Vanilla extract 1 teaspoon

Instant Coffee 1 tablespoon
Warm water 4-5 tablespoons

Filling:
Mascarpone cheese or Cream cheese 175g (¾ cup)
Heavy cream 80ml (⅓ cup)
Powdered sugar 120g (1 cup)
Vanilla extract 1 teaspoon

Chocolate ganache:
Dark Chocolate 150g
Heavy cream 80ml (⅓ cup)

Measuring cup size - 240ml
Baking pan - 25x35 cm

Method:

Add the egg whites and sugar into a larger bowl.
Whisk at high speed until still peaks form.
Add the egg yolks one by one.
Whisk about 15 seconds after each addition.
Sift the flour and the baking powder into the egg mixture.
Slowly and gently mix using a hand whisk.
When there are no dry flour lumps,
Add the cooled melted butter (not warm), in two parts.
Again mix using the hand whisk, slowly and gently.
After about 1 minute, the butter should be mixed well.

Get a spatula and give a final mix.

Pour the batter into the lined baking tray.
Level the top of the batter.
Tap the tray a few times to burst any bigger bubbles.

Bake in a preheated oven at 175c (350f) for about 13-15 minutes.

Take out of the oven immediately.
Take out of the baking pan soon after.
Turn it upside down onto another baking sheet.
Do this carefully.
Peel off the baking sheet from the cake.
Now roll the cake carefully with the new baking sheet,
(making the sheet rolls with the cake)

Now leave it cool completely while it is rolled.

Make the coffee mixture by mixing the warm water and coffee together.

Make the filling:
Add all the ingredients into a bowl,
And whisk for about 1-2 minutes, until creamy.

When the cake is cooled:

Open it gently on a flat surface.
Cover the inside surface with the cooled coffee mixture.
(you can use a brush or a spoon)

Now spread the filling on top of that.
Spread out smoothly.
Leave about ½ inch gap without the filling, at the far edge.

Now roll the cake back gently.

There won’t be any cracks as this is a very soft and flexible sponge.
So don't worry.

Make the chocolate ganache:
Microwave the cream and the chocolate for about 1 minute.
Mix well.
Cover and let it cool down.

Final touches:

Apply the ganache over the cake, however, is easy for you.
Let it set for about 10-15 minutes.
(you can keep in the fridge too)
Get a fork and make little markings over the cake.
Now it should resemble a wooden Log!

Cut off thin slices from both edges.

Dust some Powdered sugar over the top,
To resemble snowing.

Decorate as you wish!

Can leave at room temperature for about 2-3 hours.
Keep refrigerated!
