🥩 Meat (Marinade & Cooking)
Ingredients:
• Salt
• Black pepper
• Cayenne pepper
• 2 tablespoons garam masala
• 2 tablespoons ginger & garlic paste
• Lime juice
• Olive oil
• Saffron
• Meat (chicken or lamb)
Instructions:
1. Mix salt, black pepper, cayenne, garam masala, ginger & garlic paste, lime juice, and olive oil.
2. Rub the mixture all over the meat.
3. Add saffron and coat well.
4. Cover and marinate for a few hours (or overnight).
5. Preheat oven to 170°C (340°F).
6. Place the meat in the oven and put water underneath to keep it moist.
7. Bake for 2½ hours until tender.
🍚 Rice
Ingredients:
• Olive oil
• Ghee
• 2 large onions (sliced)
• Garlic paste
• Garam masala
• Curry powder
• Bay leaves
• 2 cinnamon sticks
• Salt
• 3½ cups water
• 2 cups rice (washed)
Instructions:
1. Heat olive oil and ghee in a pot.
2. Add onions and cook until golden.
3. Add garlic paste, garam masala, curry powder, bay leaves, and cinnamon.
4. Add salt and water, bring to a boil.
5. Add rice and cook until done.
6. Add a little more olive oil and ghee, cover, and let rest for 5 minutes.
🥣 Sauce
Ingredients:
• 1 onion
• Garlic
• Fresh coriander
• 2 tomatoes
• Habanero pepper
• Olive oil
• Water
• 3 tablespoons yogurt
• Salt
• Lemon juice
Instructions:
1. Blend onion, garlic, coriander, tomatoes, habanero, olive oil, and a little water.
2. Pour into a bowl.
3. Add yogurt, salt, and lemon juice.
4. Mix well — ready to serve.
