This khatti, meethi and teekhi adrak lunji will blow your mind!
Ingredients
150g ginger
3-4 finely chopped green chilies (adjust as per spice tolerance)
40-50g tamarind
3-4 curry leaves
1/4 cup jaggery
1/2 tsp methi dana
1 tsp rai
1 tsp jeera
1/2 tsp hing
1/2 tsp red chili powder
2 whole dried red chilies
1/2 tsp haldi powder
2 tbsp oil
Salt to taste
Steps to Make Lunji
1. Thinly slice the ginger and shallow fry in oil until golden brown and crispy. Let it cool, then grind coarsely.
2. Boil tamarind in water for 8–10 minutes. Strain pulp and water; set aside.
3. In the same oil used for frying the ginger, add rai, jeera, methi dana, hing, dried red chilies and curry leaves. Let them crackle.
4. Add finely chopped green chilies and sauté for 2 minutes.
5. Add tamarind mixture, red chili powder, haldi, salt and cook for 5 minutes.
6. Add coarse ginger and cook until about 80% of the tamarind water is absorbed.
8. Add 1/4 cup water if mixture is too thick.
9. Now add jaggery and cook 5 more minutes on low flame.
10. Serve hot with chapatis or paranthas. Enjoy!
