Recipe:

2 x 40cm Carpenter Fish (Serves 8)

1/4 cup sunflower oil
2 x tbs real butter
1 x tbs Jeera
1 x tbs fine Jeera
1 x tbs tumeric
1/2 x tbs Himalayan salt
1 x tbs Seafood Masala
6 x fresh garlic cloves
1 x large fresh lemon
1 x bunch fresh coriander
2 x large green chilies

For Garnish:

Green salad to present fish on
Lemon
Olive Oil
Red Onion

Method:
Gut and clean your fish ( if not done already)
Under running water clean again ( a toothbrush comes in handy to do this )
On a cutting board slice the skin of your fish on both sides and set to one side.
Chop the garlic and add to your Mortar and Pestle
Add other spices to taste and make a good paste to rub on your fish.
Rub your paste into your fish ( inside and out)
Place your pan on stove with some oil and butter, and allow to get hot. ( your curry leaves should curl and bubble when oil is ready)
Place fish in Pan and allow to cook, turn when you feel it is ready. Remove once cooked through.
Once fish is ready place on top of salad.
Chop sliced red onion and coriander, Place on Fish, with some lemon slices. drizzle olive oil over fish.
Serve with Fresh bread and butter. (I had mine with chips (fries) )
A great dish to share on the table.
