FRITTATA WITH SPINACH AND FETA
INGREDIENTS
6-8 EGGS
1 WHITE ONIION (OPTIONAL)
MEDIUM SIZE BAG OF SPIANCH
PARMESAN
I FRESH CHILLI
BUTTER
FETA CHEESE
CRACK EGGS INTO A BOWL AND BEAT , MELT BUTTER IN A LARGE FRYING PAN (GET YOUR GRILL ON) AND BROWN A CHOPPED WHITE ONION, ADD SPINACH, ONCE WILTED ADD EGGS AND FETA CHEESE, DISTRIBUTING EVENLY AROUND THE PAN . GRATE SOME PARMESAN ON TOP AND TRANSFER TO THE GRILL ONCE THE BASE HAS COOKED. LEAVE UNDER THE GRILL FOR APPROXIMATELY 4 MINS, OR UNTIL FIRM . FLIP OUT ONTO A PLATE AND SPRINKLE WITH A CHOPPED CHILLY, SALT AND PEPPER TO TASTE.
KALE AND TAHINI SALAD
INGREDIENTS
SALAD
2 CUPS THINLY SLICED KALE
2 CUPS RED CABBAGE
2 CUPS BROCCOLI FLORETS
2 LARGE CARROTS GRATED
1 RED PEPPER THINLY SLICED
2 AVACADOS
HANDFUL OF FRESH PARSELY
1 CUP OF WALNUTS
1 TBLS SESAME SEEDS
DRESSING:
1/3 OF A CUP OF GRAPESEED OR AVOCADO OIL
1/2 CUP OF LEMON JUICE WITH FLESH
THUMB OF PEELED AND GRATED FRESH GINGER
2 TSP WHOLE GRAIN MUSTARD
2 TSP PURE MAPLE SYRUP
1/4 TEA S OF SALT
WHISK ALL THE DRESSING INGREDIENTS TOGETHER AND SET ASIDE. SLICE ALL THE VEG AS THINLY AS YOU CAN AND PLACE IN A BOWL MIX IN THE DRESSING AND LASTLY ADD THE DICED AVOCADOS SESAME SEEDS AND WALNUTS . GIVE A LAST TOSS AND SERVE.
