CREAMY CHICKEN BOTI CURRY
Ingredients
Boneless chicken (cubes) 500 grams
For Marinade:
Lemon juice 1 tbsp
Cashew paste 2 tbsp
Ground cardamom 1/4 tsp
Melted butter 2 tbsp
Ginger garlic paste 1 tbsp
Green chilli pastes 2 tbsp
Corn flour 2 tbsp
Roasted cumin 1 tsp
Hung curd 2 tbsp
Mozzarella cheese 1/4 cup
Cream 2 tbsp
Chopped fresh coriander 1 tbsp
Salt 1 tsp
For Creamy Sauce
Oil 2 tbsp
Butter 2 tbsp
Onion (blended) 2 pieces
Ginger garlic 1 tbsp
Green chilli (blended) 8 pieces
Cashew powder 2 tbsp
Salt 1 tsp
Roasted ground coriander 1 tsp
Chopped basil 1 tbsp
Fresh parsley 1 tbsp
Oregano 1 tsp
Crushed red chili 1 tsp
Black pepper powder 1 tsp
Yogurt 1/2 cup
Cream 2 tbsp
Parmesan cheese 2 tbsp
Thai red chilies 2 pieces
Parsley (for topping) as required
METHOD FOR CHICKEN
Marinate chicken cubes with all the ingredients, grill for 10 mins, remove and give dum of coal.
METHOD FOR SAUCE
Heat butter and oil, add in the grounded paste, fry well, add coriander powder, oregano, basil, cumin, all the rest, add yogurt, salt, add the cooked chicken, stock 1 cup, cook till boiling, lastly add cream, remove in a dish, serve garnished with thai red chilies, parmesan cheese and greens.
DESI MURGH SHORBA
Ingredients
Desi chicken 1 kg 16 pcs
Onions 3 sliced
Tomatoes 3
Ginger garlic paste 2 tbsp
Green chilies 4-6
Bay leaf 1
Cinnamon ½ inch
Cloves 8
Black pepper corns 10
Salt 1 tbsp
Chili powder 1 tsp
Turmeric ½ tsp
Roasted and crushed cumin 1 tsp
Coriander powder roasted 1 tsp
Curry powder 1 tbsp
Black pepper crushed ½ tsp
Clarified butter ½ cup
METHOD
Marinate chicken with ginger garlic paste, lemon juice and leave it overnight in fridge. Heat ghee in a handi, fry onion golden, add tomatoes, ginger garlic paste and chilies, cook until tomato soft, remove and blend into a fine paste, add ghee in a pan, add whole spices to the pan, add marinated chicken, cook well for 10 mins, add all the spices with 10 cups of water to cook chicken, cook for atleast 1 hour, sprinkle with chopped green chilies, ginger slices, kasuri methi and allspice, serve with nan.
