Ingredients
1.2 kg ground turkey breast
120–150 g unsalted butter, room temperature
100 g panko breadcrumbs (for the mixture)
200–250 ml heavy cream
½ tsp ground black pepper — no more
2 tsp salt
Panko breadcrumbs (for coating)
A little ghee or oil for frying
Instructions
Add the breadcrumbs soaked in cream to the ground turkey.
Add the unsalted butter at room temperature.
Add salt and black pepper.
Mix with a stand mixer for 3–5 minutes until fully combined.
Lightly oil your hands to prevent sticking and start shaping the cutlets.
Coat the shaped cutlets in panko breadcrumbs.
Heat a pan and add a little ghee.
Cook the cutlets over medium heat for 5 minutes, covered.
After 5 minutes, flip to the other side, cover again, and cook for another 5 minutes over medium heat.
After that, tilt the cutlets on their side and cook for no more than 2 minutes.
Serve hot — your culinary masterpiece is ready!
