Hello everyone! 👋 Today, I’m excited to share my recipe for Rabdi Malpua—a delicious, traditional Indian dessert perfect for festive occasions 🎉. This indulgent treat combines crispy, fluffy malpuas soaked in sugar syrup, topped with creamy rabdi 🥞🍯. It’s the ultimate sweet dish to enjoy with your loved ones during celebrations! Follow along step-by-step to make this mouthwatering recipe at home.
INGREDIENTS:
Full cream milk 4 cups
Refined flour (Maida) ½ cup
Sugar 1½ cup
Saffron ½ tsp
Cardamom powder ½ tsp
Ghee (clarified butter) for deep frying
Dried rose petals and Shredded almonds and pistachio for garnishing
METHOD:
1) To prepare the batter, Boil the milk in a thick-bottomed kadhai or non-stick pan. Cook on high flame, stirring continuously until it reduces to about half (2 cup). Allow the thickened milk to cool.
2) Add refined flour to the cooled thickened milk, ensuring no lumps. Cover and set the
batter aside for 2-3 hours. (For instant malpua, add 1 tbsp curd and a pinch of soda bi-carb.)
3) To prepare the sugar syrup, combine sugar and ¾ cup water in a deep pan. Let it sit or 5 minutes. Cook on medium flame until it boils. Add ¼ tsp cardamom powder and saffron strands. Mix well and set aside.
4) Heat ghee in a flat-bottomed iron pan or non-stick frying pan.
5) Check batter consistency by dropping a small ladleful into the hot ghee as shown in the video.
6) Deep fry malpua on medium flame until crispy and slightly red on both sides.
7) Soak the fried malpua in prepared sugar syrup for 2 minutes.
8) Drain from the syrup and garnish with sliced almonds, pistachios, and dried rose petals. Serve crispy hot malpua accompanied by rabdi (optional).
