Miascia - Old World Italian Bread Pudding

Miascia is a traditional peasant dessert from The Lake Como region made with stale bread and fresh and dried fruit. I made this for a wine tasting event
and they wanted individual servings. The muffin tins were the perfect size for the event. Traditionally it was made in a cake pan. I added some homemade whipped cream that went perfectly with the Miascia.

Miascia Recipe
Ingredients:
1 loaf of Italian Bread, crust removed and torn into pieces
2 cups milk
4 eggs
1 Pink Lady apple, cored and finely chopped
1 Bosc Pear, cored and finely chopped
½ cup Golden Raisins
½ cup Caster Sugar
3 ½ Tablespoons Butter melted
1 pinch of Sea Salt
Finely grated rind of 1 large Lemon
1 teaspoon of Vanilla Extract
For Topping:
1 Tablespoon of fresh chopped Rosemary leaves
Golden Demerara sugar or Raw Sugar to sprinkle
Bake in Muffin Tins (makes 12)
Instructions:
1. Preheat oven to 325 degrees.
2. In large bowl, place bread that has been torn into pieces.
3. Brush bottom and sides of muffin tins with butter. Remainder of butter will be used for the top of the bread.
4. In a medium bowl, whisk together eggs, caster sugar, salt, lemon rind, and vanilla.
5. Then, add fresh fruit and raisins to egg mixture and stir until well blended.
6. Add milk to bread until bread is completely covered.
7. Next, add egg mixture with fruit to milk-soaked bread and blend well.
8. Divide mixture evenly into muffin tins and brush tops with melted butter.
9. Sprinkle with Demerara or Raw Sugar and chopped Rosemary.
10. Bake for 33 to 35 minutes or until a light golden color.
11. Let cool for 2 minutes and remove carefully with a fork.
12. May be served with whipped cream.
