Coconut Poundcake
1 cup unsalted butter, softened
1/2 cup shortening ( Crisco)
3 cups granulated sugar
6 large eggs at room temperature
3 cups all-purpose flour
1/4 teaspoon salt
1 cup whole milk
1/2 teaspoon coconut flavoring
1/2 teaspoon almond flavoring
1/2 cup sweetened flaked coconut
1. Do not preheat the oven! Grease and flour a 10-inch tube pan (or spray with a baking spray with flour like Baker's Joy).
Set aside.
2. In a mixing bowl, cream butter, shortening, and sugar on medium-high speed until light and fluffy (about 5 minutes).
3. Lower the mixer to low and add eggs, one at a time, beating after each addition.
4. Add the flour alternately with milk, beating until just combined. Add flavorings and coconut, beating until combined. Pour batter evenly into the prepared tube pan.
5. Place pan in the cold oven. Bake at 350°
F. for 1 hour and 15 minutes or until a toothpick inserted near the center comes out clean.
6. Cool for 15 minutes on a wire rack before removing from the pan. Remove the cake and let cool completely on a wire rack.
