A very brief explanation of MIDI:

MIDI can be sent on 16 different channels. This is so different devices can be used at the same time without interference.

Each of these channels can send additional info on 127 sub-channels, called CC (or Control Change/Continous Control).

The info that these sub-channels send is very simple, but also very useful. All these channels do is send a value from 0-127. This value can then be used to control things like synth parameters, such as the cutoff filter as demonstrated in this video.

So, when you're blowing into your digital wind instrument, all you're doing is sending a value between 0 and 127 to your software or hardware. This value can change continuously based on how hard you're blowing. Continous Control.

By the way, some of these sub-channels have "traditional" roles. If you're a keyboardist, and you use the mod wheel on your keyboard, there's a high chance that the value reported by the mod wheel will be sent via CC1. For that reason, a lot of synthesizers, including Monolit and Synth One, are set up to receive CC1 and use it for stuff without any programming required from the user. This is very useful in the case of Monolit, and a bit of an annoyance in the case of Synth One, as discussed in the video.

Electronic wind instruments usually report the value from the air pressure sensor on CC2. Sometimes other CCs are used, such as 7 or 11. It doesn't matter, functionally, they're all the same, but considerations should be made based on the software or hardware your instrument is connected to. For example, most Garageband instruments are set to respond to CC11. The incredible wind synth plugin EVI-NER is set to respond to CC2.
