Chettinad Squid Masala is a flavorful dish from the Chettinad region of Tamil Nadu, known for its bold and aromatic spices. The dish combines tender squid with a rich, spicy masala made from a blend of freshly ground spices like fennel, cumin, coriander, and black pepper. Infused with the earthy warmth of sesame oil and garnished with fresh coriander, this masala offers a vibrant and satisfying taste experience. Perfectly paired with steamed rice or Indian bread, Chettinad Squid Masala is a must-try for lovers of robust South Indian flavors.
Tip: Be sure to cook the squid just until it turns opaque and curls slightly to maintain its tender texture.
Ingredients :
7 medium size (200 gms net) Squid Rings - (net weight is after cleaning)
Making of Chettinad Masala Powder :
1 inch Cinnamon Stick (dalchini)
1 blade Star Anise (chakra phool) (optional)
3 nos Green Cardamoms (Haree Elaichi)
1 tbsp Coriander Seeds (sabut dhaniya)
1 tsp Black Peppercorns (kali mirch)
1 tsp Fennel Seeds (saunf)
½ tsp Cumin Seeds (jeera)
4 nos Dry Red Chillies (sookhee laal mirch)
10 to 12 nos Curry Leaves (karee patte)
Other Ingredients :
2 tbsp Sesame Oil
½ tsp Fennel Seeds (saunf)
1 sprig Curry Leaves (karee patte)
1 small size (60 gms) Onions (finely chopped)
12 to 15 nos (45 gms) Shallots (finely sliced)
1 tbsp Ginger Garlic Paste (adrak-lehsun paste)
2 small size (75 gms) Tomatoes (finely chopped)
½ tsp Turmeric Powder (haldi powder)
1 tsp Kashmiri Red Chilli Powder
½ tsp Salt (or as per taste)
75 ml Water
2 nos Green Chillies (whole, slit or punctured)
1 sprig Curry Leaves (karee patte)
2 to 3 tbsp Coriander Leaves (chopped)
Note : tsp is teaspoon
tbsp is tablespoon
Use Oil as per your diet restrictions
Use Chillies as per your spice preference
Always wash curry leaves & coriander leaves before use
