Homemade Chicken Broth
Ingredients:
1 whole chicken or 2–3 lbs of bone-in chicken parts (necks, backs, wings, thighs)
1 large onion, unpeeled, halved
2 carrots, cut in chunks
2 celery stalks, cut in chunks
4–6 garlic cloves, skin on
1 tsp whole black peppercorns
2-3 bay leaves
Small bunch of parsley
1 tsp salt (add more to taste later)
Cold water (enough to cover everything by 1–2 inches)
Instructions:
Tip 1: Always start with cold water—this helps draw out the collagen and flavour slowly and keeps the broth clear.
Tip 2: Once it boils, lower the heat and simmer low and slow, don’t bring to boil again.
Tip 3: Don’t stir to keep the broth clear
Tip 4: Cool the broth completely before refrigerating
Add all the ingredients to a large pot—chicken (or bones), chopped vegetables, and seasonings.
Cover with cold water and place the pot on the stove.
Bring to a gentle boil over medium-high heat.
Once it reaches a boil, immediately reduce the heat to low.
Skim off any foam or impurities that rise to the top.
Let it simmer low and slow, uncovered or partially covered for 3 to 4 hours.
Once done, strain the broth through a fine mesh strainer or cheesecloth for extra clarity.
Let it cool completely before refrigerating.
Once chilled, you can skim off the solidified fat from the top if desired.
