This creamy spinach sauce for pasta comes together very quickly, perfect for busy weekdays. With dry or homemade pasta, it gives your meal an amazing flavor, and no need to cook together – still delicious the next day. Simple, light, yet full of taste – give it a try!
Ingredients (serves 4-5)
450 g frozen spinach
200 ml cooking cream
4 garlic cloves
30 g walnuts, finely chopped
60–70 g grated semi-hard cheese (Trappista-style)
1 tbsp olive oil
1 tbsp butter
Salt to taste
A pinch of white pepper
A small pinch of nutmeg
Instructions
Place the frozen spinach directly into a dry pan.
Heat gently, stirring occasionally, until about 80% of the liquid evaporates.
Add olive oil and butter, then garlic; sauté briefly until fragrant.
Pour in the cream, season lightly, add nutmeg, and simmer gently for 3–4 minutes.
Partially blend in the pan (about 40–50% smooth).
Stir in walnuts.
Remove from heat and mix in the cheese until creamy.
At the end, adjust the salt to taste.

Reheat slowly and loosen with 1–2 tbsp milk or water if needed.
Combine with pasta only before serving to keep it light and creamy.
A small pinch of nutmeg enhances flavor without overpowering.
