For Stuffing:
Mawa - 250 gm
Jaggery - 150 gm
Ghee - 1 tbsp
Chopped Almonds - 2 tbsp
Chopped Cashew Nuts - 2 tbsp
Chopped Pistachios - 2 tbsp
Raisins - 2 tbsp
Desiccated Coconut - 1/2 cup
Cardamom Powder - 1/4 TSP
For Dough:
Rice Flour - 1.5 cup
Water - 1.5 cup
Salt - a pinch
Ghee - 1 TSP
For Rabri Doodh:
Milk - 1 liter
Saffron - a pinch
Cardamom Powder - 1/4 TSP
Jaggery Power - 3 tbsp
Chopped Pistachios

Step-by-Step Instructions
Prepare the Filling:
In a pan, lightly roast the grated coconut and chopped dry fruits in a little ghee.
Add Jaggery and mawa and cook for a few minutes until well combined. add cardamom powder mix it and Set aside.
Prepare the Dough:
Bring the water to a boil in a pot and add a pinch of salt and ghee.
Gradually add the rice flour while stirring continuously to form a dough.
Cover and let it rest for 10 minutes.
Once the dough is warm enough to handle, knead it well until smooth.
Shape the Pithas:
Take a small portion of the dough and roll it into a ball. Flatten it to make a small cup or puri shape with your hand.
Place a small amount of the filling in the center and carefully seal the edges to form a ball or a crescent shape. Ensure it is sealed properly to prevent the filling from coming out during cooking.
Cook the Pithas in Milk:
In a large, heavy-bottomed pot, bring the milk to a boil. Add saffron strands.
Gently drop the prepared pithas into the boiling milk. Tip: Do not stir immediately, let them sit for a few seconds so the outer layer can cook slightly.
Reduce the heat to medium-low and let the pithas poach and cook for about 10 minutes.
Add cardamom powder and let it cool for 5 minutes.
Add Jaggery Powder
Garnish with chopped almonds and pistachios.
Doodh Pitha can be served warm or chilled.
