A unique cookie recipe made with honey and lavender. You' d think lavender is only for perfume and lotion, but it's actually great for cooking if you don't overdo it. This recipe originally calls for lavender sprinkled on top but I added a smidgen of lavender extract to get more of the lavender flavor without going overboard. You can taste it without it tasting like someone spilled perfume on your cookie.
Recipe:
2/3 cup melted unsalted butter
1 cup sugar
1/4 cup honey
1 egg
1 tsp vanilla
1/8 tsp lavender extract
2 cups flour
2 tsp baking soda
1/2 tsp salt
Chill for 30 minutes. Roll small balls in course sugar. Place on parchment lined baking sheet. Sprinkle with lavender buds (fresh or dried). Bake 10 minutes in 350° oven.
