As eye-catching as it is interesting, this Dragon Fruit Sherbet is a cool partner to the fruity-sweet Apricot & White Chocolate Biscotti!

INGREDIENTS NEEDED
===================
For the sherbet:
3/4 cup almond milk or whole milk
1 (13.5-ounce/400 mL) can unsweetened coconut milk
1/2 cup sugar
1 teaspoon vanilla extract
For the biscotti:
2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/2 cup unsalted butter, at room temperature
3/4 cup sugar
1 teaspoon grated lemon zest
1/4 teaspoon salt
2 large eggs, at room temperature
1 cup finely chopped dried apricots
1 cup milk and/or white chocolate chunks (I used a combination)
