for the cookies
200g plain flour
1 tsp cinnamon
1 tsp pumpkin pie spice
1/2 tsp baking soda
1/2 tsp salt
120g unsalted butter
110g granulated sugar
80g light brown sugar
60g pumpkin puree
1 egg yolk
1 tsp vanilla
for the cinnamon sugar
100g granulated sugar
1 tsp cinnamon
for the cream cheese frosting
120g cream cheese
1 tsp vanilla
230g powdered sugar
Cinnamon for topping
mix together all the dry ingredients & set aside
in a separate bowl cream together the butter & sugar, then add the pumpkin purée, vanilla & egg, mix together
-slowly add the dry ingredients to create a dough
roll the mixture into balls (this should make 8 medium sized cookies)
pop in the fridge for 1 hour
roll the individual cookie dough balls in the cinnamon sugar until they are coated
place them, spaced out onto a baking tray & bake at 180c for 12 minutes
-let them cool completely before adding your cream cheese frosting & a dash of cinnamon
