First of all, I promise you, this recipe does not require any special chefs skills
The secret of this recipe is the Sharmoula or (Charmoula/Chermoula)
The chermoula is a quite miraculous marinade, it's a traditional Moroccan spice blend. Charmoula sauce is great for serving atop -- or used to finish –to marinate fish (like in our video above), shrimp, chicken lamb beef, or even vegetables.
Charmoula is a 100% Moroccan sauce and its one of the secrets of Moroccan cuisine and its the crown of Mediterranean sauces
Chermoula used to marinate fish, chicken, and turkey is a little bit different than the one for red meat such as lamb, beef and I will very happy to share a special video of Chermoulas recipes with my channel subscribers.
Ingredients :
1 cup (20g) bunch fresh flat-leaf parsley leaves
2 cup (20g) bunch fresh cilantro leaves and stems
2 cloves of garlic, {of course peeled}
1/2 teaspoon ground cumin
1/2 teaspoon ground Black pepper
1/2 teaspoon kosher salt
1/2 teaspoon paprika
1/3 teaspoon Chili pepper
Large pinch of crushed red pepper flakes (if you like it a little bit spicy)
1/2 squeezed lemon 1 lemon
3/4 cup (175ml) extra-virgin olive oil
Combine the parsley, cilantro, garlic, cumin, salt, Black pepper, Paprika, chili pepper, crushed red pepper flakes in a bowl of food. add the olive oil and squeezed lemon; mortar or blend or pound until pasty The chermoula should be inconsistency as shown in the Video; if not, add more oil. Taste to adjust the seasoning.
Orzo and Grilled Vegetables
1 + 1/2 cup of Orzo
1 yellow squash
1 medium eggplant
1 bunch of asparagus
2 medium carrot
A bunch of any mushrooms you have (king trumpet mushroom or king oyster mushroom)
Oven Roasted potatoes wedges :

Let’s make homemade crispy potato wedges:
Soak the golden potatoes in boiling water until it's soft ( about 10 minutes / DO NOT overcook it) then cool it down using runny cold water
after that, cut it wedges as shown in the video
These wedges are generously seasoned with salt, black pepper and chopped fresh thyme and spray a little bit of olive oil or vegetable oil before baking, which makes them mysteriously and utterly irresistible. they are far more redeeming than your average French fries. They’re as healthy as fries can be, basically
Do not forget to soak the fish on the green sauce (Chermoula) and refrigerate it at least for 3 hours before starting cooking {24h will be GREAT}
