Ingredients
Flour
Water
Salt
Chives
Eggs
Mung bean noodles (Cellophane noodles, glass noodles, 粉丝 in Chinese)
Soy sauce ( optional)
Seasame oil (optional)
Steps
1) prepare the dough by mixing flour with salt and hot water, see it aside for 15 minutes
2) prepare the glass noodle by soaking it with hot water and some salt for 5 minutes, then take it out and let it cool down, cut it to small pieces
3) cook chives with eggs, add salt and your favorite spices such as black pepper and garlic powder, then transfer to a plate
4) mix glass noodles cooked chives with eggs (most recipes use raw chives to make the filling, but my family likes cooked chives for milder taste), add salt, pepper, garlic powder, soy sauce and seasame oil and mix well, many recipes also call for dried baby shrimps and oyster sauce, but I don’t have them😂)
5) roll the dough and divide it into several small pieces, then roll each one into a round shape
6) add filling to one half of the round shaped flattened dough (wrapper), use the other half to cover the filling, seal the edge by pinching it or folding it as shown in the video as long as the filling will not come out
7) cook them in a nonstick pan on medium heat, about 2 minutes per side if the pan is hot, the first batch might take a little bit longer for each side
8) transfer to a plate and enjoy!
It’s amazingly delicious 😋 This is my first time to make it, it’s so easy to make! It’s full of chives! No wonder why it’s Eileen Gu’s favorite Chinese food!
