My name is Anthony and I'm an Italian living in Canberra, Australia. I love to make a big fat mess in the kitchen! I'm passionate about good food and lots of it.
Today, I'm making Rolled Pork Leg- on coals! I've used a rub I made from my previous Pork Belly video. I recommend watching how I put it together (video is on my channel) and then come back to try it for this recipe.
Now, you might not have all the equipment for this but maybe someone you know does? Otherwise, try it out on a standard BBQ!
Try this at home, let me know how you go and how you made it your own.
Ingredients/equipment:
1. 8kg Pork Leg
2. Salt Rub
3. Lemon
4. Hickory wood chips
5. Charcoal
6. Shredded Paper
7. Firelighters
8. Spit roaster!
9. Leaf Blower!
Method:
1. Soak wood chips in water for 2 hours
2. Rub pork with lemon
3. Add salt rub to pork
4. Start fire with shredded paper, firelighters and charcoal
5. Use leaf blower to enhance fire
6. Place coal and pork on spit grill
7. Line edges with cold coals
8. Fill smoke boxes with wood chips
9. Roast for 3 hours
10. Leave to rest for 15 minutes
