2 Easy, Summery Japanese Dishes - Getting to the Root of the Dish

We’re jumping right into the hot pan with this cooking extravaganza! This time around, Chef Junko has some REALLY fantastic summery dishes to see us through the heat. And what’s better is that they are SUPER easy! Seriously! You gotta see this one!
The first dish is a crunchy, creamy lotus root salad. We start by peeling and slicing the lotus root. Blanch it in a water and vinegar bath to remove a bit of the starch. Finish it up by straining it out and putting it aside to rest. While the lotus rests, go ahead and de-string your snow peas (arguably the hardest part of the prep). Once de-strung, boil the peas for 40 - 60 seconds. Strain them. Add just a drop of oil in the boiling water and add the lotus root in. Again only boil them for about 60 seconds. Strain the roots. From here, all you have to do is combine the lotus, snow peas (cut in half if you wish), protein (in our case an imitation crab from Japan), Kewpie mayo, stir, and enjoy! This delicious and easy dish will have all your friends wondering when you had the time to get your degree from the CIA!
The second dish is gonna look VERY similar, but add a little citrusy twist substituting ponzu sauce for the Kewpie. To make the ponzu, take half a cup of dashi (store bought or made from scratch: kelp, bonito, water. Refrigerate over night), half cup of soy sauce (we used white), tablespoon vinegar, 2-3 tablespoon citrus juice of your choice, teaspoon of sugar, mix and enjoy. The burdock salad is pretty similar to the lotus root. Shave the burdock, cut, blanch in water and vinegar, strain and let rest. De-string your sugar snap peas (half them if you wish). Boil the peas first, then the burdock (adding a dollop of oil to raise the heat). Add your peas, burdock, protein, and ponzu sauce in a bowl. Mix it all together and enjoy! It couldn’t be easier!
