Ingredients:
Sungura Grain Stew
Pre-boiled sungura grains (from about ½ kg dry grains)
1 medium onion, diced
2 medium tomatoes, chopped or grated
3 cloves garlic, finely grated
3 medium carrots, diced
1 teaspoon salt (or to taste)
¾ teaspoon curry powder
¾ teaspoon paprika
⅓ teaspoon black pepper
1 tablespoon tomato paste (optional, or use extra fresh tomato instead)
5 tablespoons cooking oil
Chopped spring onions or coriander (for garnish)
Chapati
3 cups hot water
1 teaspoon salt
2 tablespoons sugar
Flour (all-purpose, whole wheat, or a mix — added gradually)
2–3 tablespoons vegetable oil (plus more for frying)
Vegetable Stew
¼ medium cabbage, chopped
1 large onion, sliced
1 medium green bell pepper, sliced
1 medium tomato, grated
½ teaspoon salt (or to taste)
⅓ teaspoon black pepper (or to preference)
3 tablespoons cooking oil
Important notes:
Spices can be adjusted to taste.
Vegetables can be substituted depending on availability.
