🍊 ORANGE RICOTTA PANCAKES WITH CREAMY ORANGE SYRUP
Ingredients
Pancakes
¾ cup ricotta cheese
2 eggs, separated
¾ cup milk
¼ cup fresh orange juice
2 tsp orange zest
1 tsp vanilla extract
1½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
3 tbsp sugar
¼ tsp salt
Butter for cooking
Creamy Orange Syrup
1 cup sugar
½ cup water
¾ cup fresh orange juice
1 tbsp orange zest
2 tsp cornstarch
2 tbsp butter
¼ cup cream
Instructions:
Pancakes:
In a large bowl, whisk ricotta, egg yolks, milk, orange juice, orange zest, and vanilla until smooth and creamy.
In another bowl, whisk together flour, baking powder, baking soda, sugar, and salt.
Add the dry ingredients to the ricotta mixture and mix gently until combined.
In a small bowl, whisk the egg whites until frothy.
Gently fold the egg whites into the batter to keep it light and airy.
Heat a non-stick or cast-iron pan over medium heat and melt butter.
Pour about ⅓ cup batter per pancake and cook until bubbles form on top.
Flip and cook until golden brown. Repeat with remaining batter.
Creamy Orange Syrup:
In a saucepan, combine sugar and water and bring to a boil.
In a bowl, whisk orange juice with cornstarch.
Add the juice mixture to the saucepan and simmer until thickened.
Stir in butter, orange zest, and cream until smooth. Remove from heat.
Serving
Serve pancakes warm, stacked high, and generously drizzled with creamy orange syrup.
