These tips will help for most, if not all, consulates. Some have different release days and different length of time (months/years) until availability but the concept is the same: Midnight Rome time wherever you are. Prenotami.esteri.it can be frustratingly slow and buggy, and it took months to secure this appointment (for two years away!).
