Описание: Lollipops with some wonderful intense maple flavour with a little hit of bacon in the center! You can made these as small candies instead of using candy sticks for these.

Found this idea in a food network magazine.

Ingredients and materials:

1 1/2 cups (375ml) of pure maple syrup (this will make about 15-20 1.5 inch diameter lollipops) Use more or less depending on the number of lollipops you are making.
1 strip of bacon cooked crisp (more or less depending on the number of lollipops you are making)
Cookie sheet covered with silicone mat or greased aluminum foil or parchment
lollipop sticks
lollipop mold

Cook bacon until very crisp and drain and pat them as dry as you can with paper towels. Break the bacon into small flat pieces.
Heat the maple syrup in a LARGE saucepan over medium heat. The maple syrup will foam up a lot while cooking.
It is okay to swirl the pan gently until it starts to boil, but once it gets to a boil there is no need to stir.
Boil the maple syrup until it reaches 300F (149C) the hard crack candy stage (a drizzle of the hot syrup makes a hard thread that is very brittle and breaks when dropped into ice water).

It will take about 15 minutes to reach the right temperature over medium heat.
The temperature will jump up very quickly towards the end of the cooking time so watch carefully. If you start to smell burning sugar, turn the heat down to medium-low.

Once the syrup reaches the correct temperature, immediately remove the pot from the heat and make the lollipops following video directions.

STORAGE:
Dip the completed cooled lollipops in powdered sugar and shake off the excess. This will keep them from sticking to one another in a container. Store them in an airtight container. I would store the ones with bacon in the refrigerator, the ones without bacon can be stored at room temperature. When removing the cold lollipops from the refrigerator, remove the lid of the container and allow them to come to room temperature uncovered. This may prevent condensation from forming on them possibly making them sticky.
