Chanar Matar Chaap
Ingredients:
Chana (paneer) 250g, boiled mashed peas ½ cup, ginger paste 1 tsp, green chilli paste ½ tsp, garam masala ½ tsp, sugar ½ tsp, salt, cornflour 1 tbsp, breadcrumbs 2 tbsp, mustard oil.
For gravy: mustard oil, bay leaf, whole garam masala, onion paste, ginger paste, tomato puree, cashew paste, turmeric, chilli, cumin & coriander powder, sugar, salt, ghee.
Method:
1. Mix chana, peas, ginger, chilli, garam masala, sugar, salt, cornflour & breadcrumbs. Shape chaaps and shallow fry till golden.
2. Heat mustard oil, add whole spices & bay leaf. Sauté onion paste, add ginger, tomato, spices. Cook till oil separates.
3. Add cashew paste, salt, sugar & water. Simmer.
4. Add chaaps, cook 5–7 mins. Finish with ghee.
