Warm up with this easy, flavorful Roasted Vegetable Soup! Made with roasted tomatoes, bell peppers, onion, and garlic, this smooth soup is perfect for cozy dinners or a healthy lunch.
Ingredients:
Bunch of tomatoes (regular and cherry)
1 onion, cut into quarters
4–5 garlic cloves, peeled
2 bell peppers, seeds removed, cut in half
1–2 tbsp olive oil
Salt and black pepper, to taste
1 tbsp sugar
2 cups (480 ml) chicken stock
Instructions:
Slice the tomatoes and halve the cherry tomatoes. Add to a tray lined with parchment paper.
Add onion quarters, garlic cloves, and bell peppers.
Drizzle with olive oil, sprinkle with salt, pepper, and sugar. Mix and arrange in a single layer with bell peppers skin side up.
Roast at 425 °F (220 °C) for 40–45 minutes. Let cool slightly, then peel bell pepper skins.
Transfer roasted vegetables to a blender, add 2 cups (480 ml) chicken stock, and blend until smooth.
Serve warm and enjoy!
