Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the First Layer (Classic Key Lime):
1 can (14 oz) sweetened condensed milk
1/2 cup key lime juice (fresh or bottled)
1 tablespoon key lime zest
3 large egg yolks
For the Second Layer (Creamy Lime Cheesecake):
8 oz cream cheese, softened
1/4 cup granulated sugar
1 large egg
1 tablespoon key lime juice
1 teaspoon vanilla extract
For the Third Layer (Whipped Cream Topping):
1 cup heavy whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Garnish:
Additional lime zest
Lime slices or twists
Instructions:
1. Prepare the Crust:
Preheat your oven to 350°F (175°C).
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until well mixed.
Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish to form an even crust.
Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while preparing the filling.
2. Make the First Layer (Classic Key Lime):
In a medium bowl, whisk together the sweetened condensed milk, key lime juice, key lime zest, and egg yolks until well combined.
Pour the mixture into the cooled crust and spread it out evenly.
Bake in the preheated oven for 15 minutes. Remove from the oven and let it cool while preparing the second layer.
3. Make the Second Layer (Creamy Lime Cheesecake):
In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
Add the granulated sugar, egg, key lime juice, and vanilla extract, and beat until well combined.
Gently spread the cheesecake mixture over the cooled first layer.
4. Bake the Pie:
Reduce the oven temperature to 325°F (160°C).
Bake the pie for an additional 20-25 minutes, or until the cheesecake layer is set and slightly jiggly in the center.
Remove from the oven and let the pie cool to room temperature. Then, refrigerate for at least 4 hours or overnight to allow the layers to set.
5. Make the Third Layer (Whipped Cream Topping):
In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
Spread the whipped cream evenly over the chilled pie.
6. Garnish and Serve:
Garnish with additional lime zest and lime slices or twists.
