Baking Anzac Slice & Clearing the Veg Drawer For Lunch | A Gentle Start to the New Year

Описание: It's the day before our grocery delivery arrives, so let's clear out the veg drawer with the simple but nourishing beef and cabbage stir fry, seasoned with ingredients from the pantry. It's been a while since I treated the family to a home baked afternoon tea, and this ANZAC-chocolate slice is a definite winner!

ANZAC-Chocolate Slice (can cut into muesli bar serves)

Stir together 1½ cups rolled oats, 1 cup desiccated or shredded coconut, ¾ cup plain flour, ½ cup coconut or rapadura sugar and your choice of add-ins such as pumpkin or sunflower seeds, chopped nuts, etc. In a small saucepan, melt 125g butter, 1/2 cup pure honey, 1 tsp vanilla and add in 1/2 teaspoon of bicarb soda until foamy. Combine together well and bake for 20 minutes at 170c. Allow to cool completely in tin and spread with a layer of melted chocolate. Refrigerate until set and cut into slices to serve. Keeps very well for snacks and school lunchboxes.
