This bake isn’t perfect — adjustments happen along the way, and that’s part of the story.
This is a long, quiet sourdough bake-along — not a tutorial.
This video is the longer, slower version of the shorter sourdough video on my channel. You’ll see some familiar moments here, with more time left in — less trimming, more waiting, and more of the real rhythm of a full bake day.
This bake focuses on a 100% white flour loaf as a starting point before gradually working toward fresh milled flour. The goal of this series is to learn slowly and thoughtfully, adjusting over time rather than chasing perfection.
I’ve baked about four to six sourdough loaves before this, so this isn’t my very first loaf — but I’m still very much a beginner. I spend a lot of time researching before I bake, which is why you’ll see techniques and tools that might look “advanced,” like a stiff starter, an incubator, and a Challenger bread oven. Not because this is the right or only way, but because it’s what’s sustainable and works well for me.
There are many ways to make sourdough. This video shows how I do it — including uncertainty, adjustments, and making a second loaf after overcorrecting hydration the first time. Both loaves turned out good, and that’s good enough for me.
Most of this video is quiet and observational. You’ll see the full rhythm of the process — feeding the starter, mixing, resting, stretch and folds, shaping, baking, and waiting — with natural kitchen sounds and occasional self-talk along the way. Anything important is shown on screen or clarified later.
After this control loaf, I’ll begin experimenting with fresh milled flour, adjusting hydration, fermentation, and technique over time with the goal of eventually moving toward 100% fresh milled sourdough.
