Smoke Salmon cure recipe:
-3 cups brown sugar, 1 cup Kosher Salt, ½ cup Black Pepper
Mix ingredients, coat on fish with a good and let set overnight or at least 8 hours. It will draw out moisture. Salmon will be more stiff. Rinse off the cure and pat dry with a paper towel. If there are bones in the salmon you should be able to pull them out with pliers. Also at this point you can put a light sprinkle of rub of your choice. Let salmon sit in room temp for about an hour.This allows the salmon to dry more. Now is a good time to go get your smoker set up.
Smoking Your Salmon:
-Temp needs to be between 175-200 degrees. Position salmon in the coolest spot in your smoker. Skin side down. Smoke until the internal temp is 145 degrees. It took around 2 hrs to smoke this salmon. I suggest using apple, cherry, hickory or a mixture of them for smoking.
