Pineapple Cream Cheese Cookies - Twisted Mikes

Описание: These cream cheese cookies will melt in your mouth. We flavor them with some crushed pineapple to create a delicious pineapple cream cheese cooke.


Recipe:

Mix together

1/2 cup softened butter
4 oz cream cheese
1 cup sugar

Mix well, then add 1large eggs and 1 tsp vanilla, mix well. Set aside

In another mixing bowl mix
2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt

Mix well
add to wet ingredients, mix well, then add 3/4 cup drained crushed pineapple, mix well.
on parchment paper lined baking sheet place 1.5 tsp of cookie mixture 2" apart, then chill in the refrigerator for 30 minutes.

Bake at 350
8-10 minutes

Let cook 5 minutes, then move to wire rack
Optional glaze:
1 cup of powdered sugar
1-2 tbsp pineapple juice
Pour onto cookies

Optional:
toasted coconut for garnish

cookies will have the most flavor when cool.
