Ingredient
4 or 5 potatoes
600g spinach
100g garlic chives
50g spring onion
1 1/2 dessert spoon of flour
add your favourite fresh greens
salt to taste
1 tsp freshly ground black pepper (optional)
1 tsp ground cumin power (optional)
4 eggs
olive oil for frying
Method
Wash all the greens, remove excess water. Combine greens, grated potatoes, eggs, season with salt, pepper and cumin powder. Mix thoroughly.
Shape all patties with very large spoon and cook them in hot oil until browning in both sides and pressing into the pan with the spatula to enhance the browning. Turn occasionally for even browning.
Serve with yogurt, garlic and mint dressing.
