*Ingredients*
2 tbsp butter
2 tbsp flour
1/4 cup bell pepper, diced
1/4 cup onion, diced
1 tbsp garlic, minced
1 to 2 cups chicken broth
Seasoning to taste (salt, pepper, etc.)
Optional: diced celery and browning sauce for a darker color
*Instructions*
1. In a skillet, melt the butter over medium heat. Add bell pepper, onion, garlic (and celery if using), and cook for about 5 minutes until softened.
2. Add the flour to the skillet, stirring constantly for 3 to 5 minutes to create a roux.
3. Gradually add chicken broth, stirring constantly until the mixture thickens to your desired consistency.
4. Season to taste, and if you want a darker gravy, add a bit of browning sauce, and the rest is history.
