Pumpkin Muffin Recipe -
2 cups of Kodiak Buttermilk Pancake Mix
1 tsp cinnamon
1 tsp pumpkin pie spice
1 tsp baking powder
1/4 tsp salt
1 ripe banana, mashed
1 cup pumpkin purée
1/3 cup plain Greek yogurt
1 tsp vanilla extract
2 eggs
1/2 cup of honey or maple syrup
1/4 cup of coconut or avocado oil
brown sugar for topping (I used swerve)

Directions:
1. Preheat oven to 350°F.
2. In a large bowl, combine pancake mix, cinnamon, pumpkin spice, baking powder, and salt. Mix until fully combined.
3. In a medium bowl, mash banana and mix with pumpkin, Greek yogurt, vanilla, eggs, honey, and oil. Stir until smooth.
4. Slowly combine wet and dry ingredients until evenly mixed.
5. Fill muffin wells and smooth the tops.
6. Sprinkle each muffin with a pinch of brown sugar if desired.
7. Bake 18–20 minutes, until golden and set.
