The specifics of Manuka honey are important to know. Honey, like olive oil, comes in many varieties and quality truly matters.
The Manuka bush is indigenous to New Zealand and somewhat in Australia. Manuka's unique antibacterial compound, methylglyoxal (rated as MGO levels) has to be present in sufficient quantities to effect benefit.
Studies have shown that a UMF rating must be high which indicates a strong antibacterial effect and this is associated with MGO levels. You want MGO levels to be above 85 (levels can be over 100) to be considered "active" Manuka honey. Anything below 83 is not considered active manuka honey.
