Texas BBQ | Bánh Bột Lọc 🥟 Vietnamese Tapioca Dumplings
🥣 Ingredients
3 cups tapioca flour
1 1/2 cups water
1/2 shrimp, diced
1/2 lb brisket/pork belly, minced
1/4 cup shallots, minced
2 tbsp sugar
1/4 cup nước mắm (fish sauce)
1/2 cup canola oil
1/2 cup green onion, chopped
1/4 cup hành phi (fried shallots)
1/4 cup nước mắm tỏi (recipe on IG profile grid)
🧾 Instructions
Boil 1 1/2 cups water and mix in slowly with tapioca flour.
Once well mixed and texture is tacky, rest to cool.
In a pan, sear meat, then add shallots, shrimp, and onion.
Mix in fish sauce and sugar.
Boil enough water in a pot to fully immerse dumplings.
Make 1” dough balls and flatten, fill, and seal.
Add to boiling water. Once they float, cook additional 3 min.
Immediately prepare an ice bath to submerge all dumplings after.
After the 3 min, scoop out, transfer to ice bath, and watch them turn clear.
Heat canola oil to 400° F and pour over green onion in a bowl.
Enjoy dumplings with scallion oil, nước mắm tỏi, and fried shallots!
