In today's episode we have come to Badkul Sweets in Jabalpur to discover the story of the famous khoya jalebi, which is believed to be invented by the founder of this place, Shri Harprasad Badkul in 1889.
Khoya ki jalebi is an utterly luscious pretzel shaped fried sweet made of khoya and tikhur. Unlike the most popular white flour jalebi, this one is dark in dark brown in colour because khoya gets seared quickly when fried, thick and soft. when you put a hot one in the mouth it just vanishes away in seconds leaving it awash with sugar syrup. The taste is very similar to that of a gulab jamun.
At the legendary Badkul Sweets we got to see the detailed making process of this favourite sweet. Although currently there are many shops in Jabalpur selling this but Badkul sweets is still the numero uno because first they are the pioneer and secondly they prepare it in pure desi ghee.
The making process looked simple but is not as the proportions and skills have to be mastered to get the best output. A slight deviation can ruin the whole batch. These khoya jalebi are proclaimed to remain fresh for 8 straight days.
The process starts with the grating of khoya which makes it lump free. It is then cooked till it melts and turns into a thick and smooth paste. Here the heat needs to be carefully regulated so as to prevent the khoya from burning and the workers at Badkul are clearly experts. Next tikhur or East Indian Arrowroot is added to it and the whole mixture is cooked for a while. It is then placed in a cloth and piped into not so hot ghee. After frying they are dunked into a thick sugar syrup and this it is ready to consume.
We really enjoyed the taste and texture of this specialty of Jabalpur.
