Pasta with White Sauce

2 cups any small cut pasta
2 tablespoon butter
1 tablespoon olive oil
1 cup chopped colored bell pepper
1 cup chopped spinach
1.5 tablespoon all purpose flour (Maida)
1.5 cup milk, warm
½ cup grated cheese
2 teaspoon Italian seasoning
1 teaspoon nutmeg
Salt and red chili flakes to taste
Boil pasta with salted water and drain. Keep aside
Warm olive oil in a pan on medium heat. Add Italian seasoning and chopped bell peppers.
Cook 2 minutes. You want your veggies to remain crunchy. Add spinach before turning the stove off. Keep aside.
In another pan heat olive olive oil and butter. Then ass in the flour.
Whisk the flour continuously using wire whisk for about a minute. You don’t have to brown the flour.
Add warm milk and whisk to combine. Let the sauce simmer for 2 minutes.
As the sauce thicken add Italian seasoning, nutmeg. Add salt and chili flakes per your taste.
Let the sauce simmer on medium heat. Stir in boiled pasta and sautéed veggies. Toss everything well and adjust any seasonings at this point.
Serve white sauce paste immediately.
