Easy 5 Minute Mini Cheesecakes that are perfect for a quick dessert!

Описание: If you're like me, you love cheesecake - and sometimes those cheesecake cravings come out of nowhere! These mini cheesecakes take 5 minutes to make, there's no baking required and can be easily customised with your favourite mix-ins and toppings!

For my mini cheesecakes, I'm making a vanilla mini cheesecake topped with biscuit sprinkles, a mini raspberry cheesecake with raspberries combined into the cheese mix, and I show you how to make a sauce (blueberries for me!) to make your mini cheesecakes look super fancy!

These mini cheesecakes are great for satisfying cravings, date nights, a quick weeknight dessert, or any other occasion that welcomes a good cheesecake!

INGREDIENTS

50g cream cheese
50ml double / heavy cream
1 tbsp. icing sugar
1/2 tsp. vanilla extract
2 biscuits (30g) (I used Digestives, but you can use Graham crackers)
1.5 tsp. butter

This creates one mini cheesecake! If you'd like to make 2 mini cheesecakes, double all the ingredients. You can scale up the ingredients for a larger cheesecake!

Blueberry Sauce:
8 blueberries
1 tbsp. icing sugar (approximately 1 tsp.)
a good squeeze of lemon juice
