LOVE LETTER COOKIES 💌✨
Ingredients:
2 1/2 cups flour
3/4 teaspoon baking powder
3/4 teaspoon salt
1 cup softened unsalted butter
1 cup sugar
1 room temperature egg
1 1/2 teaspoons vanilla extract
strawberry jam
Directions:
whisk together flour, baking powder and salt then set aside
cream together butter and sugar until light and fluffy
add in egg and vanilla extract and continue mixing until egg is incorporated
slowly add in flour mixture
the dough should clump into a ball
refrigerate dough for 1 hour
roll our dough onto a lightly floured surface and cut out squares
spread on some strawberry jam in the centre of each square
fold in the corners to create an envelope shape
use a small heart cookie cutter to cut out hearts and place it in the centre of the envelope seams to create a stamp shape
this recipe makes about 15 - 20 cookies
these cookies will not spread in the oven
bake at 350F for 25 minutes
