Nickname "La Ville Rose," we discovered these distinct terra-cotta bricks in the Place du Capitole. The central market is one of our favorite places to stop by where you can truly get a sense of the local life and what kind of food the city can offer. Victor Hugo Market is no exception. It is a miraculously clean culinary hub where you can find the freshest seafood, meat and produce. We sampled some local cheeses and bread, along with the regional cake called Le Fénétra, a dessert with almond, lemon and apricot. Not far from the market is the Couvent des Jacobins. We were mesmerised by the architecture and the colorful hanging lights from the unbelievably high ceilings. It is a marvellous sanctuary where you can find inner peace.

When in Toulouse you must try the traditional, authentic cassoulet and the Maison du Cassoulet serves up a wonderful version with duck confit, sausage, pork and white beans...a perfect warm dish during the cold months. Unfortunately we arrived too late to see the Basilique Saint-Sernin but it is still worth gazing at the beautifully lite church from the outside. We finished the night off at Bloomy Bistronomie Végétale, a restaurant that is 100% vegan. The dishes, flavors, presentation and service were all outstanding.
