🟢材料:
吊片(半乾魷魚)150克
豆豉 15克
青辣椒 200克
薑、蔥、蒜頭、紅辣椒 適量
紹興酒 1湯匙
蠔油 1茶匙
生抽 1茶匙
糖 1茶匙
鹽 1/4茶匙
澱粉 適量
🟢做法:
1️⃣ 把土魷浸軟,取出魷魚骨,皮撕走,洗淨切件。
2️⃣ 豆豉洗淨跟蒜頭一起略為切碎備用。
3️⃣ 熱鑊下油,放薑片,爆炒青椒至有少許微焦盛出備用。
4️⃣ 熱鑊下油,下薑片,爆香蒜頭豆豉,下土魷翻炒,土魷不需要炒太久,開始卷曲就加入青椒和紅辣椒。
5️⃣ 加入鹽、糖、蠔油、生抽、紹興酒,蓋鍋蓋焗10秒,勾芡上碟。
🟢Ingredients:
Dried squid (semi-dried) - 150g
Fermented black beans - 15g
Long green peppers - 200g
Ginger, spring onions, garlic, red chili peppers - as needed
Shaoxing wine - 1 tbsp
Oyster sauce - 1 tsp
Soy sauce - 1 tsp
Sugar - 1 tsp
Salt - 1/4 tsp
Cornstarch - as needed
🟢Cooking Directions:
1️⃣ Soak the semi-dried squid in water until it softens. Remove the bone and skin, then cut it into pieces.
2️⃣ Rinse the fermented black beans and chop them together with the garlic.
3️⃣ Heat the wok with oil, add ginger slices, and stir-fry the long green peppers until slightly charred. Remove from the wok and set aside.
4️⃣ Heat the wok with oil again, add ginger slices, stir-fry the chopped garlic and fermented black beans until fragrant. Add the squid and stir-fry for a short time, then add the long green peppers and red chili pepper.
5️⃣ Add salt, sugar, oyster sauce, light soy sauce, and Shaoxing wine. Cover the wok and cook for 10 seconds. Thicken the sauce with cornstarch and serve.
